This Festive Bikini – How to Make It

WThis is a simplified take on a cocktail found on a new cocktail list. Designed as a party-sized premix that is bursting with flavours of a Christmas time, which makes it perfect for your festive gathering. Any leftover cordial for brunch beverages, puddings, or to make another batch of this cocktail.

The Bikini Cocktail

Yields 10 people

To make the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

To make the Cocktail (makes 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

For the Cordial: Put the listed ingredients into a saucepan, bring to a gentle boil, mixing so the sugar melts. Then, take off the burner allowing it to reach room temperature fully. Decant into a clean bottle, seal and store chilled, where it will keep for up to four weeks.

For the Premix: Mix the specified liquid ingredients into a sizeable container, leave to sit for an hour, then filter it best through cheesecloth, so it's completely strained.

To serve: Measure 85ml of the premix into your mixing glass filled with ice, gently stirring gently for one minute to chill. Pour to a chilled martini glass or similar, top with a few cranberries and finish by giving it a light spray of the essential oil over the drink.
